OK, so it seems that gnome-shell inherits the theme from Metacity and
thus automatically gets Oxygenised.

It can be fixed by:

gsettings set org.gnome.desktop.wm.preferences theme 'Adwaita'


But I think we need to re-assess how using the oxygen theme everywhere
affects the gnome3 experience.
